Tuna Salad ~ Lunchbag Week 16

Omega-3 fatty acids. Foods containing these (such as tuna and eggs) are supposed to be “brain foods”, and some studies have shown that increased Omega-3s in the diet can even help with ADD. Since my high school senior’s grades are in the toilet, no, in the toilet and SWIRLING, I’m taking help wherever I can get it. Grounding and other “taking away privilege”-type plans haven’t worked; long, serious talks from parents and grandparents haven’t helped; even the ever-popular crying, screaming, hysterical psycho-Mom episodes haven’t made a difference. I’ve had conferences with teachers, made rules, set long-term and short-term goals, all the things that you are supposed to do. What it comes down to is that you can’t force someone, child or adult, to learn. All I can do is provide the best “learning environment” I can and pray. So here’s lunch for this week:

Tuna Salad

Mix together:

1 can tuna packed in water (drained)

1 tsp olive oil

1/3 cup cottage cheese

1 Tbsp mayo

1/4 large red onion, chopped

1 stalk celery, chopped

1 Tbsp capers

1 Tbsp lemon juice

1 tsp Dijon mustard

4 hard-boiled eggs, chopped

dash Tabasco

salt and pepper to taste

Eat it on crackers, in a sandwich, on lettuce, or mix with pasta. I must admit I had my doubts about cottage cheese and capers in tuna salad, but this is really delicious. Hopefully this salad and a novena to St. Jude (patron saint of lost causes) will help get his lazy butt through high school. As for college, well . . . “I’ll think about that tomorrow!”
