Turkey and Swiss Sandwich ~ Lunchbag Week 17

Oh, yes, it’s a celebration of leftovers at our house! I always make HUGE amounts of everything on Thanksgiving because I LOVE the leftovers. We had a yummy breakfast of stuffing and potatoes, mixed and dropped in large balls onto a cookie sheet, with an egg cracked into a well in the center – bake at 400 until the egg is as set as you like – DELICIOUS! I have a stuffed meatloaf in the fridge waiting to be baked and served with leftover peas, and I’m having sweet potato salad for lunch this week. The turkey carcass gets boiled for Turkey Noodle Soup, and I once again tried (and failed) to make potato pancakes from leftover mashed potatoes. The leftover dumplings got eaten up fast, as did the key lime pie. There is just nothing better than a good turkey sandwich, though, and this one’s a keeper.
It’s supposed to be grilled, which I’m sure would make it even more delicious, but since this is a cold, going-to-school sandwich I didn’t grill it. Just mix 1/2 cup mayo with 1/4 cup mustard (coarse-grain if you have it), mix with 1 Tbsp thyme and salt and pepper to taste. Spread on 2 slices of bread and layer on turkey, thinly sliced red onion, and Swiss cheese. This is a little bit of heaven in a sandwich bag, let me tell you!

  1. The leftovers are the best! I like my turkey sandwiches on toasted wheat bread, smeared heavily with cranberries. Yum.

    Think I might go make one! 🙂
