King Cake ~ Lunchbag Week 28

I’m making Grillades and Grits for Mardi Gras on Tuesday, but here’s what’s going to be in lunchboxes for dessert all week (and maybe a little slice with my breakfast coffee, too):
This is an old Southern Living recipe, and it makes two cakes, so you’ll have one for home and one to send to school, take to work, or give to a friend or neighbor.
16 oz. sour cream
1/3 cup sugar
1/4 cup butter
1 tsp salt
2 envelopes active dry yeast
1/2 cup warm water
1 Tbsp sugar
2 lg eggs, lightly beaten
6- 61/2 cups bread flour (you can use all-purpose, it will just make a heavier cake)
1/3 cup butter, softened
1/2 cup sugar
1 1/2 tsp ground cinnamon
Cook first four ingredients over low heat until butter melts. Set aside and let cool. Mix yeast, 1/2 cup warm water, and 1 Tbsp sugar and let stand for 5 minutes. Beat sour cream mixture, yeast mixture, eggs, and 2 cups flour until smooth. Gradually add more flour until a soft dough forms.Turn dough out onto a floured surface and knead until smooth and elastic (about ten minutes). Cover and let rise in a warm place about an hour – until doubled in size. Punch down dough and divide in half. Roll each portion into a 22 x 12 inch rectangle. Spread 1/3 cup softened butter on each rectangle and sprinkle with sugar and cinnamon. Roll up jelly-roll fashion and bring ends together to form a circle. Place on greased cookie sheet. Cover and let rise again until doubled. Bake at 375 for 14-16 minutes. Let cool slightly. Mic powdered sugar with water until you have a glaze of the consistency you like (mine was a little thicker than I like in the picture, but Jack was in charge of the decorating). Sprinkle with alternating bands of colored sugar in Mardi Gras colors (purple, gold, green). It’s traditional to insert a little plastic baby doll into the cake before baking to represent the Christ child, and the person who gets the slice with the baby will have good luck in the coming year. I’ve never been brave enough to put plastic in a hot over, so I wait until after it’s baked and sneak the baby in through the bottom of the cake. And use more waxed paper than I did if you’re letting the kiddos decorate. I don’t know what I was thinking.

  1. I am soooo impressed! You and Jack do great work. Wish I were your next door neighbor. If it keeps snowing I may have to try this today, but I have no Jack to decorate it for me.
