Potato Salad Two Ways

It’s that time of year: parties and picnics and potlucks. I’m planning Aaron’s graduation party and can’t decide which of two wonderful potato salad recipes to use. The first, Killer Potato Salad, is a variation on my sister-in-law Marcia’s recipe. I’ve been making it for years for potlucks and Cub Scout events. In fact, there was one year that several parents threatened to not attend the annual fall campout if I didn’t make this potato salad. It really is that good. The second is a recent addition to my recipe binder. It’s a Bobby Flay creation that was tacked onto the end of a steak recipe. I thought it looked interesting and tried it out on my finicky “we don’t eat potato salad” family. They LOVED it.
Killer Potato Salad

5 pounds red potatoes, boiled with skins on
½ quart mayo
1 pound bacon, cooked crisp and crumbled
3 Tbsp vinegar
8 oz. sour cream
7 chicken bouillon cubes dissolved in ½ cup hot water
1 bunch green onions, sliced
1 cup shredded cheddar

Mix mayo, sour cream, bouillon, and vinegar. Cut potatoes into bite-sized pieces; add bacon, cheddar, green onions, and mayo mixture. Bake uncovered 45-60 minutes at 350. Delicious hot or cold. This recipe serves a Cub Scout Pack and their families, so you may want to cut it in half.

Warm Potato Salad with Mustard Vinaigrette

2 ½ pounds red potatoes, cooked fork-tender and quartered
½ pound bacon, cooked crisp and crumbled (save drippings)
¼ cup red wine vinegar
2 Tbsp Dijon mustard
1 tsp honey
2 cloves garlic, chopped
Kosher salt and coarse-ground black pepper to taste
¼ cup olive oil
2 Tbsp chopped fresh basil
2 Tbsp chopped fresh parsley

Mix bacon drippings, vinegar, mustard, honey, garlic, salt, and pepper. Slowly whisk in olive oil, and then add basil and parsley. Gently toss potatoes with vinaigrette. This one’s also good warm or cold. Double it if you need to feed the Cub Scout Pack and their families.
