Healthy Party Salad

Do you have a potluck coming up during the holidays? Maybe three or four?  For me potlucks are a huge hurdle when I’m trying to eat healthy.  I love other people’s cooking, I love to try things I haven’t tried before, and it seems so harmless to “take just one spoonful of each thing to be polite”.  And a potluck is the perfect opportunity to cook that fabulous dish that tastes SO good, but is so fat-laden or high-sodium or whatever that you would NEVER cook it for a meal at home.  But you have no hesitation about taking it to a potluck.  I’m as guilty as the next person.

This year I decided to do something different.  I took a healthy salad to a potluck this weekend.  It’s colorful and crunchy, so no one realized they were eating something healthy along with the bourbon corn pudding, shrimp and grits, and coconut cupcakes.  It’s based on a recipe Joyce at October Farm posted in the Fall, but I made a few changes to make it even healthier than the original version, and I think I think I kept the distinctive flavor.  Try it both ways!

Healthy Party Salad

2 cups baby spinach

1/2 head purple cabbage, thinly sliced (with a mandolin slicer if you have one)

1 head savoy cabbage, chopped

1 bunch cilantro, chopped

1/2 bag bean sprouts

1/4 cup roasted red pepper

1/2 orange or yellow pepper, sliced thin or chopped

Mix thoroughly.

Dressing:

2 Tbsp lime juice

3 Tbsp olive oil

2 Tbsp sesame oil

3 Tbsp soy sauce

1 tsp fresh ginger, minced

1 tsp fresh garlic, minced

1 Tbsp brown sugar

I like to mix the salad and dressing a couple of hours in advance, to let the flavors mingle.  It’s still nice and crunchy, even the next day.

    I do get a little tired of…”Cheese? Why thank you! More cheese? Umm…sure? Cheese? Uh…ok, just one more. GET THE CHEESE THE HECK AWAY FROM ME!”

    That may be why we don’t get a lot of repeat invitations?

    But I love the look of that one. Tasty and pretty and a really really good antidote to…well…cheese.
