Grown-Up Tuna Melt

I hadn’t had a tuna melt since the elementary school lunch line, but I remembered them fondly.  A couple of weeks ago I was having some serious doubts about whether my next paycheck would arrive on time, so I started hunting up frugal recipes.  Anything that didn’t involve ramen noodles got preference.  I decided to fancy the tuna melt up a bit, add a little more “oomph” with stuff I already had in the fridge, and it turned out to be a big hit!

1/2 cup sour cream

1/2 tsp minced garlic

2 tsp capers

2 green onions, sliced

8 slices wheat bread

2 (5 oz.) cans tuna, drained

1 Tbsp mayonaise

4 slices American cheese

4 Tbsp butter

Mix sour cream, garlic, capers, and green onion.  Spread on 4 slices of bread.  Mix tuna and mayo, and spread on the other 4 slices.  Top with cheese, and assemble sandwiches.  Melt butter and brush on both sides of sandwiches.  Grill until golden brown.
