Leftover Sandwiches

I have two teenage boys, but we still never manage to finish a pork loin or beef roast when I cook one.  And the guys just aren’t enthusiastic about eating leftovers unless I can make it look like something new.  This was my latest attempt, and it was an unqualified success.

I had some lovely, tender pork loin left over, so I picked up a package of Hawaiian rolls at the grocery.  I split all the rolls in half horizontally, scattered a layer of shredded pork over them, and put a dollop of barbeque sauce on each roll.  I had some provolone cheese in the fridge, so I split 2 slices between all the little sandwiches.  Then I put the tops of the rolls back on and brushed them with a mixture of 1/2 stick melted butter and 2 Tbsp onion flakes.  Bake at 350 degrees until they start to brown, and you have mini-sandwiches they will never recognize as last night’s leftovers!  And those green beans are one of my new favorite side dishes, courtesy of my Aunt Beverly!

  1. I love Hawaiian rolls, and I use them for sandwiches for my left-over pork loin. But, oh, the onion flakes, provolone … all fo that sounds wonderful. I’ll try this, too, the next time. Being single, I ALWAYS have left-overs and try to do different things. Yummy!!!
