I love sweet potato fries. And I love them most when I spray the wedges with Pam, sprinkle with kosher salt, coarse-ground pepper, and garlic, and bake until brown on the edges. Then I sprinkle a little balsamic vinegar over them and make yummy noises. On the day I took this picture I needed to use up some leftovers, so that sandwich next to the fries is a pressed chicken sandwich on homemade rice bread with caramelized onions, spinach, and feta cheese. Yeah, baby!
