Bacon and brown sugar? Count me in! I defrosted some raw bacon the other day specifically to make these (I usually only keep the partially cooked kind in the house) but as I started to make them I realized I had no wooden toothpicks! The ones I thought were wooden were plastic, and that would have been pretty nasty after thirty minutes in the oven. So I improvised. I wrapped the cubes of raw chicken in bacon and snuggled them close together in a brownie pan. Then I mixed the brown sugar and chili powder and sprinkled it over the top. We ate it for supper over rice, and it was delicious! Unfortunately, I forgot to take a picture Next time I will get some toothpicks, but I think I’ll do the topping the same way – it’s so much easier! And it actually took a full forty minutes for the chicken to get completely done rather than the thirty to thirty-five the recipe suggests. I think these would be great to take to a potluck or serve as appetizers at a Christmas party.
