Last night was cold and wet, and we were all in the mood for some comfort food and some time snuggling up with the dogs on the sofa to watch a movie. We rented Cowgirls and Angels from Redbox,
which was a very sweet movie that had been recommended by Couch Critics. Planning an early night, we didn’t eat at the table, we just filled our plates and ate while watching the movie (I know, I know, but we were tired!)
I made my Aunt Beverly’s Hot Browns, which are easy to make and outrageously delicious.
Kentucky Hot Brown
- 6 slices bread, toasted and sliced diagonally
- 12 oz. thick-sliced turkey breast (this is the best I’ve found so far)
- 1/2 cup grated Romano cheese
- 8 strips half-cooked or pre-cooked bacon
- 1 stick butter
- 1/2 cup flour
- 2 cups chicken stock
- 2 cups scalded milk
- salt and pepper to taste
- Melt butter and whisk in flour (do not brown). Remove from heat and chill.
- Heat milk and broth (do not boil). Add hot mixture to chilled flour mixture, and whisk until thickened.
- Add salt, pepper, and cheese until melted.
- Preheat oven to 375 degrees.
- Assemble Hot Browns in a 9×13 pan in the following order: toast, turkey, sauce, and bacon.
- Bake for 15-20 minutes until bubbly.
This also freezes well. Enjoy!
