Ten Summer Camp Lunches

I’ve been rooting through my recipes in preparation for marching band camp later this summer.  John will be hauling a big bass drum around in the heat, so he needs high protein lunches with enough carbs to keep him going throughout the afternoon, but nothing too heavy.  Here are my top ten choices:

Turkey Apple Sandwich (pictured above)

Ham and Swiss Wraps (John adores ham)

Grilled Buffalo Chicken Sandwiches

Caesar Pork Sandwich

Curried Chicken Salad (one of my summer favorites)

Fruit and Rice Salad

Broccoli Berry Salad

Party Salad

Banana White Chocolate Mini Muffins (He’s fourteen – he has to have dessert!)

I spread a tortilla with cream cheese and put a thin slice of turkey on it before rolling it up.

A delicious line up of meals! I’m going to have to try that broccoli berry salad.
A favorite lunch here is mini pizzas – an english muffin with a little sauce and toppings to suit your fancy, topped with a little shredded mozzerella and popped in oven a few minutes.
