Accidentally Delicious Southwest Pasta Salad

What happens when you have a bowl of leftover pasta and about half the ingredients a recipe calls for?  This does!

We ate this scrumptious salad hot the night I made it, and then cold the next night – easy, frugal, and delicious!  My big ‘Oops’ was grabbing a can of what I thought was corn at the grocery.  It turned out to be Golden Hominy.  In my defense, it did have a picture of an ear of corn on the label.  And I was having a really bad pain day when I went grocery shopping.  But by the time I realized my mistake I had already cooked the chicken, and it was too late to thaw anything else.

2-3 chicken breasts, cooked and shredded
1/2 box pasta of your choice, cooked and drained
1/2 cup salsa
1 can chopped tomatoes with green chilies, drained
1 can black beans, drained
1 can golden hominy, drained
1/2 red onion, chopped
1/2 cup cheddar cheese, shredded
1/2 cup sour cream

Combine and serve hot or cold. Makes eight main-course servings.

I think this is going to be my go-to potluck dish this summer!

    1. Hominy is kinda like puffy corn. I know that sounds weird, and I don’t know what they do to the corn to turn it into hominy. But it’s been around forever, and it’s in the canned veggie aisle. Now you have me wondering, and I’m going to have to research hominy!!
