addicts I’d be showing up at a meeting every Tuesday night. So when I won a CSN stores giveaway on Mind of a Mad Woman
, well, a new kitchen toy was the obvious choice! Say hello to my new friend, the Hamilton Beach stand mixer!
Once it arrived I of course wanted to use it ASAP, so I started hunting down recipes that 1.) required a longer mixing time than the 30 seconds I’m usually willing to devote to that sort of thing, and 2.) included ingredients I already had in the house. What I came up with is loosely based on a recipe from Recipezaar, but very loosely since once I started putting things together I realized everything in the recipe was in grams instead of the usual measurements – oh, well, it turned out nicely, so I’m going with it!
9 Tbsp (1 stick + 1 Tbsp) butter, softened
2 lg eggs
1/2 cup milk
1 1/2 tsp baking powder
1 cup sugar
1 tsp vanilla
1 1/4 cups flour
3 medium apples, peeled, cored, and thinly sliced (pull out that Pampered Chef peeler-corer-slicer)
2 tsp cinnamon
1/4 cup brown sugar
Dump everything except the apples, cinnamon, and brown sugar in the mixing bowl.
Mix on low until combined, then on medium for three minutes.
Pour into a greased bar pan.
Press apple slices into batter.
Sprinkle with brown sugar and cinnamon.
Bake at 350 for 20 minutes.
