Chicken Fiesta Casserole


Every family has a season that is busiest for them – a month or so when no one seems to be home at the same time, everyone is eating at odd hours, and no one has time to cook.  For our family it’s Fall (marching band) and here’s one of my go-to recipes: Chicken Fiesta Casserole.

  • 1 pkg (24) small corn tortillas
  • 2 Tbsp Country Crock Original Spread
  • 3 chicken breasts, cooked and shredded (use leftover chicken or rotisserie chicken to speed this up)
  • 8 oz. cream cheese (softened)
  • 1 can yellow corn (drained)
  • 1 can petite diced tomatoes (drained)
  • 1 can black beans (drained)
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 1 – 1 1/2 cups shredded cheddar or Mexican blend cheese
  1. Preheat oven to 350 degrees.
  2. In a medium mixing bowl combine chicken, cream cheese, corn, tomatoes, black beans, cumin, and chili powder. Set aside.
  3. Evenly and generously coat one side of each tortilla with Country Crock and use them to line a casserole dish.

4. Pour in chicken mixture and top with cheese.
5. Fold over edges of tortillas onto top of casserole, creating a “pot pie” effect.
6. Bake, covered, at 350 degrees for 30 minutes (longer if you want a crispier crust).

This recipe actually served four people for dinner at one time of the evening or another, two midnight snacks, and one lunch the next day! This was my personal favorite:


  • Corn tortilla, coated with Country Crock to hold everything in place, with a couple of scoops of chicken mixture. My husband added cheese to his 😉

What makes this recipe special is all the options available. It can be assembled in a foil pan and frozen (just thaw and bake as above). It can be assembled in a crock pot and cooked on Low for four hours.  It can be divided into individual casseroles that each family member can tuck into the oven or microwave when their schedule suits. The mixture can be scooped into a cold tortilla (like I did with my midnight snack), wrapped in waxed paper, and eaten on the go.

By the way, did you know that Country Crock Spread has 0g trans fat per serving, contains no partially hydrogenated oils, has no cholesterol, is 70% less fat than butter per serving, and has 30% fewer calories than butter per serving? Of course it also helps that it’s easily spreadable so impatient people like me don’t have to wait for butter to soften 😉
