I had one ear of corn and one zucchini left the other day, so this is the salad I came up with, and it was delicious!
1 zucchini, sliced into long strips with a mandoline slicer if you have one. Otherwise just chop it up, but leave the peel on.
1 ear of corn, cut off the cob
2 green onions, sliced
1 medium tomato, chopped
1 Tbsp lemon juice
1 Tbsp olive oil
1/2 tsp kosher salt
1/2 tsp coarse-ground black pepper
2 Tbsp chopped fresh basil
Mix, chill, and enjoy. It’s even better if you let it marinate overnight.
