Graduation Party Menu

Tuesday was Aaron’s High School Graduation, and we had a houseful of friends and family here to celebrate. Since John’s Fifth Grade Graduation ceremony was that afternoon, my menu could only include things that could be cooked beforehand. It actually turned out very nicely, and I think this may become my “go to” meal for celebrations this time of year. I had several requests for recipes, so here they all are:
Party Pork Chops (I actually used half a boneless pork loin, the kind Kroger puts on sale about every other week, and instead of grilling it put it in the crockpot on low for about 8 hours with the marinade.) on packaged Hawaiian bread rolls.
Watermelon Salad (totally addictive)
Red Velvet Cake, personally prepared by Beverly herself, and without doubt the best cake I’ve ever tasted. Sadly, Aaron’s never going to be satisfied with a bakery red velvet cake for his birthday ever again.

Broccoli Berry Salad, made famous by Louisville’s BEHA Catering
3/4 cup mayo
2 Tbsp vinegar
1/2 cup powdered sugar
4 cups chopped broccoli
1/2 cup white raisins
1/4 cup chopped red onion
1/4 cup shredded carrots
1 cup sliced strawberries
1/4 cup peanuts ( I left these out because we have peanut allergies in the family)
Mix first three ingredients and pour over remaining ingredients. Toss.

    Aaron will never have to have a bakery Red Velvet Cake as long as I'm living, so say for the next 50 years. What a fabulous job you did Mom.

  4. Everything I tried was DELICIOUS. Sorry I'm not a broccoli fan — I can't comment on that salad.

    What do I have to do to meet Beverly, and get a Red Velvet Cake of my very own?? Have another baby?

  5. Sounds fabulous! I've bookmarked the broccoli and watermelon salads to try. So perfect for summer!

    I make a broccoli-cauliflower salad with bacon, raisins, and sunflower seeds .. with a sweet mayo dressing. It sounds odd, but is so good.
