I realized yesterday that I’ve been a slacker and haven’t posted a recipe in quite a while. So here’s one that’s easy and delicious! Let’s start with the sauce (my Aunt Beverly‘s Mornay), since that’s the only part that takes any effort at all:
1/2 stick butter
1/4 cup flour
1 cup chicken broth
1 cup warm milk
1/4 cup grated Romano cheese
salt and pepper to taste
–Melt butter, blend in flour (do not brown). Remove from heat and chill.
–Heat milk and broth, but do not boil. Add hot mixture to flour mixture and beat with whisk until it thickens. Add cheese, salt, and pepper.
Now here’s how to assemble the pizza. I use pre-made crusts and pre-heat the oven as per the directions on the back of the package. Scatter some leftover turkey or some canned chicken on the crust. Spoon sauce over the chicken. This recipe makes enough to generously cover two large pizzas. Then you can add crumbled bacon or my personal favorite, thin circles of pancetta – YUM! A sprinkling of diced tomatoes if your family will eat them, and a sprinkling of Romano or Parmesan cheese over the top. Bake until it just starts to brown, then let it sit and cool for a few minutes before you slice it.
