Let the wedding weekend festivities commence! I’m like a kid who’s been waiting for Christmas: counting down the days, not sleeping, driving everyone around me crazy. Now it’s here and I want to savor every moment 🙂
Here are the Blue Suede Shoes iris I’m hoping to use in the Rehearsal Dinner centerpieces. If not enough have bloomed I’ll be crossing my fingers and running to Trader Joe’s for something purple.
These are the truffles I made as favors for the rehearsal dinner. It’s my friend Nancy’s recipe, and they are so rich and delicious. You’d never guess they are super-simple and have only three ingredients!
Okay, okay, I’ll share:
- 2/3 cup heavy whipping cream
- 12 oz semi-sweet chocolate chips
- 2 tsp vanilla extract
- Heat cream to boiling, add chocolate and stir until melted.
- Add vanilla and refrigerate at least three hours (overnight is good).
- Use small scoop to form balls on waxed paper.
- Freeze until firm (about fifteen minutes).
- Roll into balls.
- Roll in topping of your choice (nuts, powdered sugar, sprinkles, etc)
- Store in fridge until ready to eat.
It has been so much fun getting ready for the wedding – mainly because Catherine and her family have made me feel so welcome during the preparations. I know not every mother-in-law and daughter-in-law get along well enough to make this work, but I’ll never forget dress shopping with Catherine and working on the flowers and other decorations with Teresa. As a mother of sons those are precious memories for me.
Big thank yous go out to my friends as well, who’ve listened to me stress and worry, talked me out of my tree many times, and assured me that everything will go smoothly. Because of them I can relax and enjoy this weekend!
Michael and John (mainly Michael): Thank you for taking care of the million things I couldn’t do because of my neck pain. I know that you didn’t understand why ninety percent of them needed to be done, but thank you for humoring me 🙂
