Pam’s Mac & Cheese ~ Lunchbag Week 24

OK, my friend Pam was KILLING me all last week with descriptions of her mom’s cooking. She started out talking about how good the Red Beans and Rice with Sausage was, and every day got better and better until by the end of the week I was greeting her with, “Whatja eat last night?” while salivating like Pavlov’s dog. She took mercy on me Friday and brought in her mom’s recipe for Crockpot Mac & Cheese. Pam says this is her go-to dish for potlucks, and you know what THAT means! All of us have at least one or two dishes that are our first choices for potlucks, funerals, somebody’s sick, somebody’s had a baby, whatever. Some well-organized souls even keep a few dishes prepared and frozen in case they’re short on time and something somes up. It’s that dish that you’ve made a hundred times, you probably don’t even need to look at the recipe, all the ingredients are in your pantry, and everyone raves about it every time you make it. I made Pam’s Mac & Cheese Sunday, and it was just as “melt in your mouth good” as she’d told me it would be! And there’s plenty left for lunches, maybe with a little leftover chicken thrown in for interest.

Pam’s Crockpot Mac & Cheese

  • 8 oz. macaroni, cooked and drained
  • 2 Tbsp vegetable oil
  • 1 13 oz. can evaporated milk
  • 1 1/2 cup milk
  • 1 tsp salt (or to taste)
  • 8 oz. Velveeta
  • 1/4 cup melted butter
Mix all ingredients together, pour into crockpot sprayed with Pam or greased with butter, and cook on low 2 hours. Now I doubled the recipe and used shells instead of macaroni, but otherwise it’s unchanged!

  1. OMG! This looks wonderful. So nice and creamy. This is the perfect old-fashion, real way, to make Mac & Cheese. This is how my grandmother made it. Without the Crockpot of course. May I make a suggestion. Use Crockpot liners, the best invention since zip lock bags. Clean up is a snap.

  2. I knew it had to have velveeta cheese in it…that's the best stuff!!! That's what I use in my homemade mac-n-cheese, along with about a cup of grated sharp cheddar.

    I never even thought to make it in the crockpot! It seems so much simpler to do it that way than the way I do it!
