I made this ice cream for John’s birthday sleepover and it was a HUGE hit. Nothing tastes better than homemade ice cream, and since I bought an ice cream maker that doesn’t require bags of ice and rock salt I don’t hesitate to make it! This is a basic recipe I compiled from several on Food.com, and you could use nearly anything in place of the oreos. Leftover Halloween candy? Chop it up and throw it in. Bits of graham crackers and chocolate ships left in the bottoms of bags? Sure, it’s s’mores ice cream. This recipe makes 5 cups of ice cream, but it can be doubled for a larger crowd and a larger ice cream freezer.
1 1/4 cups half-and-half
4 egg yolks
1/2 cup sugar
1 1/4 cups heavy whipping cream
2 tsp vanilla extract
pinch of salt
1 1/2 cups cookies or candy, chopped
Heat half-and-half in saucepan until it’s steaming, stirring often.
Mix eggs yolks and sugar, gradually add hot half-and-half.
Cook over medium just until bubbles form at edge of pan.
Pour into large mixing bowl and stir in whipping cream, vanilla, and salt.
Cover and chill.
Add to ice cream maker and follow manufacturer’s instruction (I just press “ON”). Add cookies or candy during last stage of freezing.
